Things My Dad Cooked

Sometimes when camping out or when Mom was sick,
Dad would get out his apron and iron skillet so thick,
To cook up some grub for my sister, JerrylDine, and I,
Although most of the good things he fixed, he would fry.

Things My Dad Cooked

Breakfast was the meal I liked best that Dad cooked up.
He put a whole pound of bacon in that iron skillet so hot.
And fried it until the edges were turning kind of black
Then took it all up piling it up in a great big old stack.

He broke eggs on the edge of that iron skillet on the fire,
And dropped six in that hot grease with skill I did admire.
He let them cook until the edges of the whites were black
Them flipped them until the yolks were hard and in tact.

Old pappy took up those hard crispy eggs from the grease,
And dropped slices of white bread in the skillet with ease.
He fried that bread until it was so dark brown and hard,
And then took out that fry bread real greasy and charred.

That fine breakfast Dad cooked up tasted so good to me,
The bacon, eggs, and fry bread were as greasy as can be,
Just the kind of tasty food I didn’t get to eat too much,
I was grateful Dad cooked breakfast with his special touch.

He sometimes broke eggs in a bowl with milk as a host,
And dropped the bread in that mix to make French toast.
It was better than fry bread as the grease was sealed out,
And we got Aunt Jemima syrup so sweet in our mouth.

At times on the weekends when Mom was out in town.
Dad fried us up some Spam until it was very dark brown.
He spread Kraft Miracle Whip 
on white bread real thick,
Making us sandwiches telling us to your ribs this will stick.

The sandwiches were good and I loved them so much.
Sometimes he fried bologna slices with his special touch.
Which were even better than the Spam when real crisp.
The bologna sometimes curled up looking like a big tit.

I recall one time much later in life when we had our girls,
Mom had a knee replacement when we came to her world.
Dad had decided to cook up a big old pot of pinto beans,
They smelled good cooking as he treated Mom as a queen.

He said they were done and I hit the kitchen on the run,
I got a bowl of beans and took a great big bite for fun.
My mouth was burning with hot pepper fire so very hot,
I spit them out and said “Dad, what’s in that bean pot?”

He had put in a half jar of jalapeños in the pot of beans
He said “what’s wrong, to me they taste fit for Queen,
Mom the Queen couldn’t eat them either so we went out,
To the Dairy Queen for steak finger meals, there is no doubt.
