My Mom’s Budget Meals
Sometimes toward the end of the month right before payday,
Mom had to stretch her budget some to keep us fed along the way.
As I think back to the things that she fixed us to keep us fed,
I miss some of those meals that I haven’t had since I was a kid.
My Mom’s Budget Meals

Mom,at times, had Kellogg’s cornflakes and Cheerios for breakfast,
With whole milk and a sliced banana with sugar to our taste.
She made us hot chocolate for breakfast from Hershey’s Cocoa.
This was plenty to get us charged in the mornings fast on the go.

Sometimes she fixed us Quaker Oats so hot and steamy good,
It was very easy to fix and all us kids loved that natural food.
She put on a pat of butter, brown sugar, and a little cinnamon too.
And topped it off with toast and peach jelly for our mouths to chew.

Sometimes she fixed us some Malt O Meal right out of a box,
She put on a pat of butter, brown sugar, and some cream on top.
A can of biscuits went into the oven and came out piping hot.
Butter and grape jelly topped off this meal we occasionally got.

My Mom fixed fried bologna cooked dark for sandwiches so fine,
With white bread with Kraft Miracle Whip spread most times.
I liked mine fried until it was almost black for that great taste,
With a package of Fritos chips and a dill pickle that I ate with haste.

Ah yes, then there were those fried Spam sandwiches so yummy,
With bread and Miracle Whip to put down in my little ole tummy.
Fried potato cakes made from yesterday’s leftover mashed potatoes,
Topped off this great meal that always filled me down to my toes.

Mom made salmon patties with onions, eggs, crackers, and milk.
Then dipped them in cornmeal before frying them to a brown silk.
We had Kraft macaroni and cheese to eat with our patties of fish.
I absolutely loved this meal that was such a very simple dish..

My Mom fixed a tuna salad that was another favorite of mine.
She added Miracle Whip, onions, and sweet pickle relish so fine,
Then whipped it up with one can of white tuna packed in oil.
It was good as a sandwich or just scooped on a plate in a coil.

Mom also fixed wolf brand chili with Oscar Myer wieners too.
She cooked the wieners right in the chili until done all through.
We then had chili hot dogs on buns with onions, mustard and relish.
With a package of chips and a bottle of Coke that was delish.

.Finally, I can’t forget.that big pot of slow cooked brown beans,
She added a quartered onion to add flavor to make them seem
Much better to our taste buds as by them the beans did pass,
Oh yes, she added a teaspoon of mustard to reduce the bad gas.

I loved all those budget meals that my Mom did cook for us all.
I can honestly say that I was never hungry a day that I can recall.
So thanks again Mom for all you did for us while under your care.
I don’t know what we would have done if you were not there.
