MaMo’s Holiday Jello Salad

After I married Pam, we often had our holiday dinner,
With her Mom that we called MaMo many winters.
MaMo had a special jello salad she fixed I loved so much,
MaMo was such a good cook with that tastes good touch.

MaMo’s Holiday Jello Salad

MaMo fixed the jello salad for Thanksgiving and Christmas,
With one small change that to us all was a big plus,
She used orange jello for Thanksgiving so very light,
And red jello for our Christmas dinner so very right.

You can tell it’s Christmas Dinner at MaMo’s house by the pink jello salad on her plate. That’s Kristi and Tamara behind her.

MaMo was a superb cook with a lifetime of experience,
She kept her recipes in her mind with no real science.
But she could cook like no other including my Mom.
As I found out quickly when to her house we did come.

I particularly liked MaMo’s jello salad she fixed for holidays,
She said it was easy to make as we gobbled it away.
Below is the recipe that even I think I could follow,
But I’m sure it wouldn’t be as good as MaMo’s to swallow.

MaMo at her best

MaMo’s Holiday Jello Salad

1 large package of red or orange jello
1 16 ounce can of crushed pineapple (drained)
1 10 ounce package of mini marshmallows
1 container of Cool Whip
1 8 ounce package of pecan pieces

”

Set jello in refrigerator in large mixing bowl until thick, then whip with mixer and fold in pineapple, marshmallows, Cool Whip, and pecans. Refrigerate until time to eat.

I was talking with my daughter Kristi this morning,
And she may make this jello salad that I’ve been yearning.
My hopes are up because she has that MaMo cooking touch,
And I know I’m going to enjoy that jello salad very much.

Yummy, I can’t wait.
