New Years Day 2018

 

 

 

Our daughter Kristi invited us over to her home for lunch,
To have enchiladas and tamales with all the Taylor bunch,
On New Years Day which really sounded good to Pam and I.
For luck, she promised there would be peas with black eyes.

New Years Day 2018

We headed over early on New Years Day to help preparing,
For that fine meal with family that seemed a little daring.
Pam and I brought stuff to make guacamole dip and queso,
So we worked on dip feeling like I was wearing a sombrero.

 

 

 

 

 

 

 

 

.

We peeled avocados, and chopped onion and some cilantro,
And then added salt and a couple of fresh chopped jalapeño.
Then mixed it altogether in a great big old green mixing bowl,
Making some fine avocado dip as our cooking juices did flow.

Kristi and Carl had the enchiladas and peas ready to cook,
When Kristi pulled out a huge pork tenderloin to take a look.
She put it in a huge bowl and shredded it up with a fork,
Announcing we were making homemade tamales of pork.

 

 

 

 

 

 

 

 

.

Carl was very busy cooking things on the stove top so near,
As Kristi sat a bowl of soaked corn husks on the table there.
She had made a big mixing bowl of tamale dough previously,
And she said we are all going to make tamales so joyfully.

 

 

 

 

 

 

 

 

.

She took a corn husk and tore off thin little long tie strips,
Then laid them aside there on the table after giving them a rip.
She picked up a corn husk and laid in there on a paper plate
Then took a blob of dough and flatted it on the husk straight.

 

 

 

 

 

 

 

 

.

She forked out shredded pork and laid it right on top then,
Then rolled the husk sides tight and folded over both ends.
She grabbed the tie strips and tied them around both of them.
And then she had a pork tamale all ready to steam by then.

We all watched and got in there making those tamales fast,
And before we new it we had made a great big tamale batch.
Kristi put the first batch in the steamer to cook as we made more.
What fun we had working together as a family as we did soar.

We all made pork tamales together there as the food did cook,
Joking around as we mastered our own technique for the book.
This was a very enjoyable family activity that we did together,
And learned how to make homemade tamales with no bother.

Then it was time to eat our enchiladas and homemade tamales.
With that avocado dip, queso, chips and the black eyed peas.
Everything was so very good, I ate a way to much food then,
Enjoying it so much as I porked out like the Hawg that I am.

We played Trivia on that afternoon with everyone there,
And the trivia King, Carl, for once did not win playing fair.
Kristi won that game as she seemed to know them all.
When the King fell, I was reading questions having a ball.
