You run into things that hit that special spot just for you,
As you live your life trying things until you’re through.
This poem is about about good things that do it for me,
I guess this about does it for Hawg Jaw once more. you see.

Good Things
Green Beans
.
Where did this thing we call green bean come from, I wonder,
That grows tall while climbing on wires and poles all asunder,
With those long pods of green hanging all over its green vines,
Ready to be picked and snapped just before our supper time.

Grandmother Low would cook up those fine Kentucky Wonders,
By first browning chopped onions in bacon grease until tender,
And then adding the beans and the right amount of water,
Then cooking them on medium heat there in their splendor.

The smells filling her home back then cooking the green beans,
With her fried chicken and turnips with fresh turnip greens,
Makes me hungry just thinking about her home cooked meals,
With her homemade biscuits and real butter, oh what a deal.

Gumbo
.
Too make gumbo you must first make a good a good roux,
With butter and flour browned in a pan to thicken that goo.
You add onions, celery, bell peppers, okra, and Cajun spices,
And then chicken, sausage, shrimp, and fish, looking so nice.

Then you slow cook it getting engulfed with an aroma so great,
Then dish out a big bowl of gumbo getting ready for a treat.
And put a big scoop of white rice in that gumbo bowl so nice.
While a great aromatic vapor rolls off of that gumbo to entice.

With a handful of hush puppies cooked up Louisiana style.
You have one of the finest meals you’ve had in a long while.
So sit down to eat and let that gumbo tease your taste buds,
As you enjoy this great meal with its own Cajun flavor flood.

Mama’s Boston Baked Beans
.
.
Mom had a special baked beans she made for a holiday treat.
She would soak brown beans in her oven bean pot so neat.
She added a ham hock to give them that very good meaty flavor.
Then added molasses and brown sugar for a taste we did savor.

.
She added a teaspoon of mustard to kill the gas after dining
And then she laid a quartered onion on the top just a shining.
And filled them with water all ready to go into her oven to cook.
cooking them 4 hours at 400 degrees often giving them a look.

When she pulled them out of the oven just perfect for us to eat,
A wonderful aroma filled the room that just made me feel great.
The first bite of those Boston baked beans so flavorful and sweet,
Made me float right up over the table right there out of my seat.

Although Mom gave me her own Boston baked beans recipe,
I wasn’t able to make mine taste as good as hers did, you see,
So she may have had a special ingredient she didn’t tell me.
They were very labor intensive, and always a treat for our family.
