MaMa’s Cookin‘

My Mom and Dad never ate out while we were growing older.
So the cooking was always a load on our Mom’s shoulders.
She became a super cook and this poem discusses her meals,
That we ate everyday as they had much palate appeal.

MaMa’s Cookin‘

Every Sunday before church Mom would prepare our fine dinner.
Into an iron skillet a Chuck Roast she placed in the center,
Then filled it with potatoes, carrots, onions and mushrooms too.
She cooked the pot roast real slow until with church we were through.

I so looked forward to getting back to our home so we could eat
That melt in your mouth pot roast with those vegetables so sweet.
I mashed the potatoes with my fork and scooped on that gravy,
And ate my favorite meal of all time that made my taste buds crazy.

Sometimes during the week she did get a very large baking hen,
She fixed dressing and giblet gravy with fresh green beans then,
While baking that fat old hen in the oven to a rich golden brown.
When this meal was ready, I would put on my bib and go to town.

Chicken fried steak was one of her best home speciality meals
She would fry it in Crisco until it was cooked to all our appeal.
In the iron skillet, she fried up golden crispy fried potatoes too.
With corn on the cob, we ate that fine food until we turned blue.

She could fix a cheeseburger like no other Mom under the sun.
Always well done with melted cheese on top and toasted buns.
French fries cooked in crisco were also ready for us to eat,
With fresh burger trimmings, this great meal was oh so neat.
I can’t forget her electric skillet fried chicken cooked perfectly,
With an oven baked potato and hand picked black eyed peas.
My Dad and I always fought over the deep fried chicken gizzard.
But there was always enough good food as Mom was a wizard.
Mom often cooked a large bone in honey glazed ham,
And a big pot of pinto beans with onion and jalapeƱo trim.
She always put a table spoon of mustard in the beans to start,
Because she read some where that it cuts down on the farts.
She fixed liver and onions sometimes because my dad liked them.
Although this wasn’t my favorite meal that she would make him,
She had a way to fix them that made them taste kinda great.
I have never eaten them since, as the taste by others I do hate.

When she was on the run, she would fix us some salmon patties.
She mixed in eggs and onions to a can of Salmon for us fatties,
And rolled them in cornmeal then fried them up to tickle our palates,
Then served them with sweet corn and a fresh vegetable salad.

When we all left home and were out making our own way,
Mom and Dad ate out just about every meal of the day,
I guess Mom was just worn out from feeding her whole family,
And decided to rest and let someone else do the cooking, you see.

We are going to my daughter Kristi’s house for Thanksgiving.
She cooks every bit as good as her Grandmother, my Mom.
