When I lived in Houston, I worked in Louisiana engineering.
The things I experienced over there, I found so very alluring.
This poem discusses the things there that did draw me back,
As I loved the people there and their wonderful culture so relaxed.

When I was over the Houston Area gas systems and gas plants,
I had South Texas and all of Louisana as the range for my dance,
The Louisana experience was different than I have ever seen,
I loved the strange local customs that were fun and so keen.

My Engineering Director in Houston was named Rayln Boudreaux.
He was raised just south of Lafayette in New Iberria you know.
The first time I was there with him , we stopped for a coffee,
When they brought mine to me, it was very thick and syrupy.

I took a small drink and it was so strong I could hardly swallow.
I ordered some Boodin sausage and a very strange taste followed,
I asked my boss what that locally made Boodin sausage had in it.
Rayln told me how it is made, and l quit eating it that very minute.

Later that day we stopped for lunch at a place that was Cajun,
My boss ordered a beer so I just followed suit just having fun.
This was the first place I worked that you have beer while working.
I guess you would expect it in a place the alligators were lurking.

For lunch, we had deep fried alligator tail for a starting appetizer.
It was excellent dipped in that Cajun hot sauce for a taste teaser.
My boss had two dozen oysters on the half shell so slimy looking,
I had crawfish étouffée that smelled just heavenly as It was cooking.

That afternoon, we drove on to a gas plant south of New Orleans,
And worked on some problems that had them running too lean.
We fixed them right up and headed for a motel just outside of town.
And we threw quite a few cold Budweiser beers right on down.

They had this band playing in that Cajun bar that we were sittin’ in.
They had fiddles, guitars, a squeeze box, and a singer singin’.
Playing that Cajun two step music with a Cajun sound so great.
With that fine music, Rayln Boudreaux kept us out way too late.

We got up early the next morning with heads throbbing a bit,
Fortunately, Rayln drove us back across the state feeling unfit,
While I slept part of the way home working off my hangover.
I really don’t know how he drove us home feeling so poorly all over.

I loved the trips into Louisana where the culture was an adventure.
I developed a taste for the fine Cajun cooking and the local lore.
Just a talk with a guy over there with their manner of speaking,
Was so entertaining and resulted in their odd culture me a seeking.

So if you’ve never made a little trip on down that Louisiana way,
Insure you get it done before you get too old to enjoy your stay.
I can guarontee you’ll enjoy yourself while you are down there,
With the good food, music, and extraordinary culture everywhere.
